    As you approach our sanctuary, tucked within the terraced hills, the world beyond seems to dissolve away. The road meanders through the hills, the air becoming fresher and sweeter while you pass through little towns and villages in the foothills. Then, Amaya reveals itself—not as an intrusion upon the landscape, but rather an extension of it–stone walls and copper roofs in harmony with the earth and sky.

    Integrated amidst the terraces before you are villas of dry-stacked stone and lime plaster, every element of which tells a story of care and handmade craftsmanship, from the local wood and marble to the Scandinavian minimalist fixtures. Enter a cosy cocoon and relax while natural light and shadow mingle within the space. Soft sunlight filters gently through the marble shutters, igniting all the warm, earthy colours and textures of the villa walls.

    Narrow paths wind through the site, inviting you to explore further. A gentle symphony to accompany your exploration through our retreat: the crunch of pine needles underfoot punctuated with trills of birdsong. The mountain air, crisper than ever at this time of year, is laden with the aroma of the pines. Snow dusts the towering trees, deodar branches shimmering silver and white in the last rays of the sun. Thrushes and warblers sing softly in the forest. You’ve got a warm sundowner in hand, and all this beauty stands before you. The expansive views of the valleys, the faint outline of the hills in the distance, and the delicate rustling of the trees in the evening breeze.

    The evening has deepened, and it’s time for the celebrations to start in earnest: warmth, joy, and indulgence. Our chefs have crafted a wonderful festive feast, a gala dinner that celebrates all the best traditions of Christmas with charming little twists from the unique flavors of the region. As ever, organic, seasonal produce sourced from the terraces and our local communities shapes the Christmas menu, and each hearty dish is blessed with fresh mountain herbs and rich churned butter. You’re treated to the choicest dried fruits, the sweetest wild honey, and the unforgettable taste of homemade pinecone syrup. Your meal unfolds amidst candlelight and a blazing fire, with tables adorned with the bounty of the forest: sprigs of deodar cedar and juniper and pine. The laughter and conversation flow freely. This isn’t just a celebration of food, but of togetherness, of the perfect Christmas getaway.

    Joy. Celebration. Togetherness. A dham is a lavish feast steeped in the history and oral traditions of a myriad Himachali communities. Every dham dish is integrated within its local context, and every district in Himachal Pradesh features its own variations on the tradition. Ours is no different: each of the eight to ten courses in the Amaya dham is locally sourced, farm fresh, modern in culinary sensibility, and utterly delicious.

    No two dhams are the same. To share a dham with others is to immerse yourself in centuries-old local culinary customs – to forge new connections with the flavours and stories and lives of the surrounding towns and villages. At Amaya, we believe that food can be so much more than just a meal – it should be a journey, an escape, a sublime memory as vivid and potent for our guests as any of our landscape views.

    If there’s one word that best encapsulates Amaya’s overarching mission, it’s ‘symbiosis’. Most will be familiar with the biological definition of the word – two organisms interacting for the mutual benefit of the other. On the surface, this sounds terribly cold and clinical. Look instead to the word’s Ancient Greek roots to reveal the warmth and the beauty within. Symbioun: to live together in good fellowship, as partners, companions, friends; to live in harmony, as in wedded life. This philosophy applies to everything we do: not only to our stewardship of the mountains and the forests and the terraces we inhabit, but to our relationships we forge with the people who live alongside us.

    Our journey in symbiosis began in the neighbouring village of Darwa. Our team of craftspeople set to work building the villagers a new temple, and donated culturally significant statues in honour of their heritage. These were not simply one-off gestures of goodwill – we built the foundations for lasting connections and friendships that continue to uplift all our lives. The temple has become something of a spiritual and cultural anchor for Darwa, a place where people gather for prayers and traditional music and annual celebrations.

    Before the very first of Amaya’s bricks had been laid, the terraces we now live on and love had long been abandoned. There was a time when our terraces were agricultural farmland, each layer its own distinct swathe cut into the hillside. Farmers’ work had maximised the amount of available arable land, prevented soil erosion and landslides, and kept water wastage to a minimum.

    However, a combination of several factors, including migration from rural spaces to the cities left the terraces deserted.  Topsoil, subjected to years of continuous intensive crop farming, had been left exposed and in poor health, in stark contrast to the lush pine trees surrounding the site. What had once been a hillside profuse with crops was now a kingdom of weeds, a microbiome unto its own that resisted the forest’s attempts to reclaim it.

    One might reasonably expect exquisitely pan-seared steamed trout fillets would speak for themselves. Light and clean, flaking effortlessly, they naturally take centre stage, but at Amaya the fish is utilised in its entirety. The collar, the off-cuts, the belly and the bones – every element brings its own unique layer of complexity to the dish, whether to complement the trout’s tender texture or elevate the wonderful subtle flavour of the fillets to savoury perfection. And of course, as ever, nothing goes to waste.

    When rain starts to fall at Amaya, time seems to slow down. A soft hush falls on the terraces, the scent of the forest floor fills the air, and the quiet patter of raindrops plays on our copper roofs like a mandolin. The effect on the trees is magical; wet pine leaves shimmer and shine, their colour somehow even deeper and greener than before, and distant trunks appear to slip away behind the veil of mist rising from the earth.

    Our retreat undergoes a wonderful transformation; one that invites you to take a moment to pause, recalibrate, and recharge.     Embracing the Forest: Amaya’s Commitment to Conservation and Biodiversity

    Amaya is a truly special place in the evening twilight. The sun sinks beneath the horizon, the light softly fades, the shadows of the pine trees stretch across the forest floor, and the air fills with the sweet fragrance of evening flowers and Himalayan honeysuckle. It’s the perfect time to take a little walk and witness a thousand little stories unfolding before your eyes.

    A hawk-moth, drawn in by the warm golden glow of the marble windows, hovers almost motionless over a native forest wildflower, her wings a silent flutter while she sips its nectar. She soon flies off into the growing darkness, braving vesper bats on the hunt overhead, to scour the forest floor for the endemic Himalayan nettle (Girardinia diversifolia), the perfect plant upon which to lay her eggs. Once hatched, her caterpillars will eat their fill of its distinct large, knobbled leaves, burrow beneath the soil to pupate, and emerge anew, unfurling silvery wings of their own.

    On a clear night, the twilight’s quiet is pierced by the song of the blue whistling thrush, who greets the night after a busy afternoon spent hopping along the forest floor, turning over leaves and stones in search of the choicest invertebrates. Then, once darkness has truly set in, the sound of a mellow hoot could even betray to the keen-eyed observer a collared scops owl perched among the branches overhead, his eyes wide in anticipation of the first mouse or beetle unlucky enough to cross his gaze.
